Last week I met Anna, the owner of ANNA BAKES and she introduced me to Naked cake. Here is a small interview we enjoyed with her in the store.

  • Anna, tell me what inspired you to start your own business and how long have you been open?
I have always loved cooking and especially baking, I love the happiness a piece of cake can bring to people, seeing it and tasting it! So when a good friend of mine was planning her wedding she asked if I would bake her wedding cake.She initially wanted cupcakes but then we stumbled upon the Naked Wedding Cake trend.  She also loved my brownies and asked if I though I could do my brownies in that style. I was very nervous and researched and sought the advice of some professionals, too, who didn’t think it would work. So I did a full on trial and, to my relief, it worked. Her wedding was last August and luckily the feedback was great.  Also everyone loves a wedding, including me, and I adored playing a part in the couple’s special day.  This, coupled with my passion for baking, led me to set up Anna’s Bakes in May 2013.
  • Can you tell us a little bit about your cake and what makes them so special?

My cakes are Brownies or Blondies. They can be tailored to the bride & groom’s favourite flavours (i.e. Oreo Brownie, Chocolate Orange Brownie or a Banoffee Blondie) and are filled with a fresh whipped cream (which can also be flavoured) or a marshmallow. They are typically decorated with flowers, fresh fruit and/or chocolate to match the brides and her bridesmaids. The brownies and blondies, unlike sponge, are decadently rich in ingredients with a flavoursome texture making them the ideal dessert.  So, not only are they a stunning wedding cake, but they also get demolished on the day which translates to a really budget friendly and cost effective option.

  • Tell us about Naked cakes as they seem to be so trendy right now, why is that?

The trend started with Hillary Duff having a Naked Victoria Sponge a couple of years ago and it has been growing ever since. The most recent celebrity mention was when Hunger Games’ Sam Claffin  & Laura Haddock opted for a chocolate Naked Cake just this summer. They are very modern looking and totally different from the traditional decorative white fondant covered cakes. You can see the cake and the filling which, let’s face it, is the part which everyone wants to eat.

  • How far do you deliver and how on earth do you keep them safe in transit?

I assemble the tiers at the venue and then decorate so they are easier to transport than you might think.  They travel in padded cool bags to keep them refrigerated and to keep them totally safe. I deliver within a 30 mile radius of the Anna’s Bakes Kitchen which is in Beaconsfield, Buckinghamshire.

  • Anna tell us who would you most like to bake a cake for ?

I have more than just a little obsession with Jamie Oliver so I think that, although it would be nerve racking to bake for him, I would most like him to eat one of my cakes. He tweeted me recently about my Oreo Crush Brownie wedding cake and I was on a high for at least a week!
